Part of what Israel did was develop nuclear technology based on plans that had been taken from the French. The USSR was allied with Israel's enemies, and viewed as a threat to Israel. At one point, to discourage the USSR from attempting to attack them, Israel strategically openned up its nuclear missle silos at a time when it knew that Soviet spy satalites were monitoring them, not as a threat, but rather to make sure that the Soviets knew that if they did attack Israel directly there would be reprecussions.
Egypt played both sides of the Cold War. They allied themselves mostly with the Soviets as their enemy Israel was supported by the US and Britain. They received a great deal of military aid as well as other benefits from the Soviets.

If the question is asking how did Israel play a role in the Cold War between the Americans and the Soviets, Israel was almost consistently (since 1953) an ally of the United States and therefore occupied a superior position vis à vis the Arab States which were aligned with the Soviets.

The Cold War in the Middle East was very complex. On the one hand, there was Israel, Saudi Arabia, Kuwait, and the Emirates on the side of the US. On the other hand, there was Syria and Afghanistan as part of the Soviet blocks. This was essential in order for the Cold War to perservere: each side had its own allies.
