I'm not sure about catholics, but christians take up about 2.5% of the population in Jerusalem.
There was not a specific place to begin the pilgrimage. It was more about where it would end up. Many in the Middle Ages traveled to Jerusalem. The goal of a pilgrimage was to reach a holy site.
Jerusalem sits up on an elevated land mass as compared to the land that surrounds it. So Jesus when up as in elevation not directionally north.
Jerusalem was originally used as fortress-capital of the Jebusites. According to the Bible, David established it as the capital of the United Kingdom of Israel. It remained the capital of Judah during both periods of Jewish home rule. In 1949, the Modern State of Israel built up Western Jerusalem as its capital. Following the Unification of Jerusalem in the Six Day War, Israel considers the whole of Jerusalem to be its capital.

Jerusalem is important because its where Jesus was hung on the cross, & where he rose in three days. And where he will come back to sit the New Jerusalem up that John seen. It is where Jesus life begin & & where we will will find total peace from the world you might say.
Jerusalem. He built it up, brought the Ark of the Covenant there, established Jerusalem as the seat of his Kingdom, and laid the groundwork for the construction of the First Temple by his son.
The battle of Armidegon is supposed fought at Jerusalem before Jesus returns. That is probably what is meant by "rockin' Jerusalem" as it is originally created to sound like, because it was an underground railroad song dressed up to be a negro spiritual.
Jerusalem was the capital of Judea until 6 CE, when the capital was moved to Caesaria.
