Chaplains were nearly always priests who had learned theology either in a monastery school or a university.
The job of an Army Chaplain is to care for the spiritual well being of Soldiers etc. Army Chaplains do not have to go through basic training but they do have to attend a Chaplain Basic Officer Leadership Course.

As with most skills of this sort the baker would apprentice with a baker to learn the job. Many were also son's of bakers who kept the family trade.
No because kids went to work instead of school. You'd leave home and become an apprentice to learn a job, and you were basically a slave until you became an adult.
