Good question! I believe that the team at Ubisoft first developed their early concepts for the game after being inspired by the struggle of people during the period of the Crusades, the feared Assassins & the Old Man of the Mountain at this period and also after learning about the 1938 novel, Alamut, by Vladmir Bartol. In the novel a main character quotes a creed, which is: "Nothing is true, everything is permitted," so they simply recycled this quote and used the ideas of Medieval Assassins under an order following a creed in a game. Hence the name, ASSASSIN'S CREED. :)
