In the movie, Jaws was almost always on the offense or neutral. The only time that differed was when they stuck 3 barrels in him and he tried to swim away. The Orca (Quint's boat) chased, then caught up with him. Then Jaws went back into attack mode again, sinking the boat.
Bascially the novel/movie had the shark as a juggernaut. Basically it will keep coming, until it dies, either by exploding gas tank (movie) or sheer exhaustion (novel).
