Because the Theodorakis's run a coffee shop, and Mr. Hoo runs a Chinese restaurant. The coffee shop had been getting a lot of business, but when the kitchen blew up, the Theodorakis's couldn't run their coffee shop until it was repaired. And, since Mr. Hoo's restaurant was the only other restaurant in the building, he would get all of the business that the coffee shop had gotten.
