Besides at the point of a sword? The social political and personal desire to survive and to get along? The failure of pagan gods to protect was telling to some. The paganization of the 'dominant religion' (Jupiter into God, Hades into Satan, Saturnalia into Christmas, etc) passified others. Remember that, multiple deity cultures were already used to and tolerant of widely differing religious ceremony and practices. The dominant religion becomes just one more major sect.
