They learned what was inside. They also learned that internal organs caused the dead body to decay much quicker, so they always quickly removed them and put them in separate jars. They learned little about how a body functioned in terms of the role of the heart, the brain, blood circulation etcetera. Those discoveries were made only much later.

You forget that the ancient Egyptians were also famous for mummification; that practice alone helped them learn much about the human body. The priests and scholars weren't stupid; they knew an opportunity to gain knowledge when they saw one, indeed many asked for cadavers to study. In ancient Egypt, you could sell your body to a priest, who would claim it if you were ever killed. To the Egyptians the body as only a shell; the soul mattered more. Because there was no "reverence for the body as a sacred temple" like other spiritual traditions, Egyptian medicine, consequently, was very advanced.
Becuase the egyptians used to mummify their cats because they were thought to be sacred, so the archaeologists could study the mummies. And they found out so much about the egyptians because they left so much information about them behind (and also mummified themselves).
