Foods were cooked over open fires, usually outdoors. Very few people had kitchens because there were no fireplaces. Fires for heat were in the middle of the rooms, on braziers or the dirt floor, with the smoke going out a hole in the roof or under the roof peaks, and when such a fire was lit, the food could be fixed indoors. There were ovens with fire boxes and baking compartments, and bread was made in these, often in kitchens with large, open windows without glazing.
