I figured on the iPhone if you just hold you finger in the icon for a few seconds a red x will appear and if you press it the icon will go away. It might be the same on the iPad or not.
The word 'Loading' under the icon of the app indicates that this app is trying to download an update. If it has been stuck for a long time and the blue bar is not progressing, try turning off your WiFi for a second and then turning it back on. That will re-start the update download.
You click on its Icon, On your Home Screen.
Favourites are called Bookmarks on the iPad. They can be found by pressing the book-shaped icon on the top left of the screen.

Stop holding your finger down on the icons. It puts the iPad into the delete selection mode. You can stop the shaking by pressing the home button.

Hold down on the icon of the application that you do not want, and an X will appear on the corner of the icon. Click this X and you can delete the application off of your iPad.
