If you have added too much liquid to mashed potatoes a "quick fix" is to add a couple of tablespoons of instant mashed potato flakes. If you add another cooked root vegetable to the pot you will alter the flavour but get a better consistency. (try carrots, parsnips, turnip, or sweet potato - just do not add any more liquid)
