Allergies are a hypersensitivity disorder of the immune system. Hypersensitivity reactions require a pre-sensitized (immune) condition of the host. Basically, it is caused by the immune system attacking something that would normally be considered harmless.

The short answer is that the body reacts to an otherwise harmless material--ragweed pollen for instance--as if it were a dangerous material. A special type of protein molecule, an "IgE antibody," is produced in your body which targets that material, called the "allergen". That sets up a cascade of reactions which leads to the release of histamine and other irritating body chemicals causing the typical allergic reaction: itching, hives, sneezing, runny nose, red eyes, even Asthma. Some people are more genetically prone to developing allergies. And then, what you are exposed to will determine what you become allergic to.
