They can live for several days in this condition. Personally, when I catch them for a party etc, I use a large ice chest partially filled with ice, a piece of carpet or towel to keep the crayfish from direct contact with the ice and close the lid.

Yes if the shells get broken otherwise no. I keep crayfish and Tilapia together and crushed some snails for the crayfish to eat, the Tilapia ate them before the crayfish had chance.
