The experts know what dinosaurs ate from their teeth. If they're sharp, they were probably carnivores. Rounded teeth suggest herbivores. Mixed-style teeth like we have are found in omnivores. And any variation in the types of teeth, and how they were specifically worn down (they compare different ages of the species) allow the experts to educatedly guess what dinosaurs ate.
