The headrest prevents the head from being thrown backwards (and damaging the neck) - and injury called whiplash, when a vehicle is hit from the rear.

Its in the rear headrests. Push the button on the dash to hydraulically raise and lower the roll bar(headrests). It is spring loaded and will pop-up much faster in the event of a roll-over.

Their is no typical up or down adjustment of the rear headrests. A release button is located to the left of the hazard light button directly in front of the shifter. That will make them fold down. You can also remove the headrests. A procedure for that is outlined in your owners manual. Up an down adjustment is not an option though.

It's not in the owner's manual. I recently purchased a used 2005 Equinox myself and needed to remove the rear seat headrests to allow my child booster seats to position correctly. After an extensive internet search I found the anwer at: http://answers.yahoo.com/question/?qid=20070513143128AALmM37 I used a small finishing nail for this procedure and was able to successfully remove my Equinox's rear headrests. Answer: Raise the head restraint to the full-up position (beyond the highest fixed position). Insert a small nail into the guide hole (located on the opposite side from the adjusting button). The retaining clips are inside the trunk. You can reach them through the hole behind the rear arm rest. Otherwise you need someone inside the car pulling the headrests out while a second person releases the clips while leaning into the trunk.
I'm not sure about your 1989 model but on my 1993 300E the rear headrests are raised manually but lowered by a switch on the dashboard. Since they are both 124 series I would think yours would work the same.
If you're checking the rear struts there's nothing under the seat; there are 3 bolts under the headrests but everything else is under the car. And FYI- it's a nightmare getting the struts off the rear of this car. I had to take mine to a mechanic cause it basically involves unbolting the entire rear end to get the struts off the vehicle.
