From studying artifacts left by ancient cultures.
They either read books by people who have studied the culture, or have read the writings of the ancient Egyptians themselves.

Most people only know what they were taught in school and what concerns their everyday life. Sargon the Great has a measurable effect on very few lives today, so the reason they do not know of him is that he was not required knowledge in the schooling they received. There is a vast amount of history , so most of history has to be left out of school curricula . The Sumerian Empire did not affect subsequent European history as much as the Greeks and the Romans did, so grade and high school ancient history in the West focuses on the Greeks and Romans. These people are also frequently mentioned in classical literature and so are good to know something about. Many many people who were very important in their time and place do not get even a mention in general history classes. Of course, most people do not remember all the people who were given an entire page in their history book. In the US the people in power want US history to be emphasized .

Egyptians didn't know their history and certainly didn't know about the one true God, the God of Heaven and earth. So, much like the Romans, they made up what they believed was their history. This includes believing in gods and worshiping idols.
