"Poule" is feminine, "coq" is masculine. It's like chicken (female) and rooster (male).
Well, la poule français means French chicken... I don't think you can say the French hen. I'm not too sure of the English version but une poule is an egg laying chicken, which I believe is a hen in English so "la poule française" is correct.
