It is measured in food calories or kilocalories, (kcal)

A kilocalorie = 1000 calories of heat.

A bomb calorimeter is used to determine the heat content of foodstuffs.

A representative sample of food is collected and 1 gram is placed in the calorimeter, the bomb is then filled with oxygen and placed in a vessel holding a measured amount of water. The sample is then burned in the bomb and the heat transferred to the water is measured, giving the total amount of heat released, in calories. This is then divided by 1000 to get food calories or kcals.
