A sell-by date does not really keep food safe. It protects the processor and store from some liability and loss. For a potentially hazardous food, it would hopefully be sold well before before spoilage takes hold or any pathogens reach a toxic level - but then I'd expect an expiration date, not a sell-by. It is not the sell-by date alone that keeps food safe. It has to be handled and stored properly, too, including after the sale. Sell-by dates are usually guides for quality, not safety.
We need to keep the earth safe from oil spills, safe from garbage traveling around the earth, safe from idiot pochers who capture animals to sell them for money, and recycly all of your plastic, glass, and paper belongings.

Foods have sell-by dates mostly to ensure the quality of the product. Foods tend to be stable and of consistent quality for a specific amount of time - this varies by the actual food. Once food has been sitting on a shelf at the grocery for a certain period of time, quality issues (off color, stale taste, etc.) may start to occur. To maintain a reputation for selling good quality products, most food producers will take back their product once it is past the sell-by date rather than put a potentially inferior product out in the market. For the majority of foods, the sell-by date is a quality metric, not a safety metric. If you have bought something and it is past its sell-by date, you may want to use it up first, but in most cases it will be safe to eat.
