Depends on what type of termites they are. With Subterranean termites, they build shelter tubes that start in the colony under the ground near the queen and branch out to food sources. This could be a fallen log in a Forest, or someones home. They will eat drywall because it has cellulose in it, up to the line of the paint. These shelter tubes provide protection for the colony, as they keep the moisture that they need IN these tunnels, and keep predators such as ants out. These shelter tubes can be anywhere from 5 to 30 feet underground.
