Toucans protect themselves by remaining above ground and utilizing flight. If their predator is airborne they will go into thick canopy, making an attack more difficult for the aggressor. Their beaks are actually of no value whatsoever in defence as despite their appearance, their beaks are quite delicate. I offered my finger upto one in Brazil and it took a nip, which didn't hurt at all as the length of the beak, its lightness and lack of purchase for muscle on its relatively small skull do not transfer power to the beak very well.
