The different layers of ice can tell us a lot of things. They can tell us how much snow accumulated in a particular season, similar to looking at tree rings. They also contain atmospheric gases trapped in the ice. This gives an indication of the composition of the atmosphere at the time, since the ice can be dated.
The thicker the tree ring the more tropical climate they lived in. The thinner the tree ring the colder and drier the climate was. 80,000,000 years ago tropical trees lived in Greenland. This tells us that Greenland was a tropical island 80,000,000 years ago.

They allow us to "know" (calculate - estimate [it depends]) what conditions were like at a known time in the past.
Determining the age of a tree is fairly easy. It involves simply counting the growth rings that can be seen on the surface of a log or on an increment core from the trunk of a tree. Each ring represents the growth produced during one growing season but contains two parts that can be distinguished on the basis of color: the early wood, less dense, is whitish in color; and the late wood, more dense, is darker in color and forms during the summer. Counting the growth rings tells us the number of growing seasons the tree has been through, and hence the age of the tree. Some tree's have quite allot of rings!!

If you know how many stripes away from the mid-ocean ridge the rock is and you know how frequently the earth's poles flip you can use the stripes like rings on a tree to measure the age of that rock.
