The only way I know you can do this is by using the following Action Replay code:

It is actually called 'Get 99 coins' but when you go into a level you will find you always have exactly 100 coins to start with. When you get another coin, as the values do not increase (unfortunately) or decrease, that you have got the 100th coin, so the 100 coin star appears. Result!
