You cannot physically beam down onto a planet, but a hologram. You can control the hologram, the hologram can only move around, it is also possible for it to swim. It cannot jump,fly,attack, or socialize with other creatures.
If you install the expansion Galactic Adventures though, you can beam down your captain and control it however you want, but this only works on specific adventure planets.

In Spore Galactic adventures you can create adventures that you can play in or out of the game. The adventure is kind of like the creature stage, you beam down to the planet and complete the tasks they tell you to do. Adventures will become missions in the space stage, alien races will ask you to beam down to the planet and complete a task for them. It's AWESOME! =) Hope this helps! :)
Use the abduction beam you get at the start of space stage. Click abduction beam and hold down the left mouce button and aim at a specific creature/plant. Do not let go until you have abducted the object.

Here's a trick, make missions with no objectives, as many as you can, then play the space stage and wait til they give you an adventure to do, then hopefully one of your missions show up, you beam down then straight away you win and get beamed up and you get 10 points, do this many times and you eventually get all the weapons.

Gravity is a force that pulls you down to the centre of a planet. If it was zero gravity you wouldn't be pulled down. Earth is the only planet that has gravity that's why you "float" in space. I hope this has helped.
There is no down in space, the debris would just be pulled in to the orbit of a near-by star, planet, asteroid etc.... or it would just scatter in different directions forever.
