You only click the mouse once to fire a bolt, and you sometimes hit more than one. If you are set to easy mode, there should never be more than 6 attacking at one time.
You have to be alert and you have to have a good outer wall, to slow them down. A few random pieces scattered a ways from your wall will also give you more time to shoot.
