You don't "become a thieve", you just improve your thieving skills. You can start by pickpocketing men and women; at higher levels of Thieving, there are many better alternatives.
i think it finally doesn't mater!thieve become the meaningless fighting machines thieve always meant to be tools of war hahaha jk but i really think they got rid of it it was kinda annoying
