To replace the power steering unit on a 2001 Dodge Dakota, first, disconnect the negative battery terminal and drain the power steering fluid. Remove the serpentine belt and disconnect the power steering pump from its mounting brackets, along with the hoses attached to it. After removing the old pump, install the new one by reconnecting the hoses and securing it in place, then refill the power steering fluid and bleed the system to remove any air. Finally, reattach the serpentine belt and reconnect the battery.

You don't bleed power steering fluid. Raise the front of the car, start the engine, turn the steering wheel lock-to-lock 3 times to get the air out of the system. Make sure to use axle stands and block the wheels so you can do this safely.
Ensure power steering fluid is to full mark. Start engine. Turn wheels slowly all the way the right until they hit the stop and hold for a minute, then slowly turn all the way to the left and hold for about a minute. You may need to repeat a couple of times. This should bleed the air from the system. I don't know of any vehicle which has a bleeder valve for the power steering reservoir or power steering system.
