Find the total possible UT for one e.g. 600 for intelligence, and 750 for personality. Then find the difference between this and your horse's UT. e.g. if your horse had 558 in intelligence, and the total was 600, its intelligence UT would be -42. Do the same for personality, e.g. your horse has 672, 750-672= 78, so -78 for personality. Then you would record them as -42/-78. (Make sure they're in the order intelligence/personality).

You go to the website listed in the source links below And use the Horse Isle UTS Calculator Tool to calculate your horses UTS. UTs mean Untrainables. It means you can't train those 2 stats (Intelligence and Personality) for your horse(s). If a horse has maxed UTs then it'll probably do better than a horse with poor UTs depending on their other stats.
Calculating UTs is actually very simple. First, add together your horse's UTs (intelligence + personality). Add the UT's of that breed. Divide your horse's UTs by the breed max, and you'll get a decimal number. Multiply that by 100 and there is the percentage!
It all depends on the UTs (untrainibles, meaning personality and intelligence), experience points, and the training in stats.
To calculate horse UTs, go to your horse and add it's personality and intelligence together. Then go the library and add the breed's UTs together. Divide your horse's by the breed max. You will get a decimal number. Multiply by a hundred to get your percentage. Example: I have a Camel with UTs of 232 and 203. I add those together and get 435. Now, I go to the library to find the breed max (300 and 200 for Camels). Add that to get 500. Now I divide my Camel's UTs (435) by the breed max (500). I get 0.87, which means my Camel has 87% UTs. Now, take your horses UT's and multiply them. Then, divide that number by the breeds max UTs. For example - Wild Selle Francais horse. The horses UTs together are 1,141. The breed max is 1350. 1,141 ....................? (Percentage of Horses UTs) ____________ x _________________________ 1,350 ...................................100 Multiply 1,141 to 100. Then divide that number by 1,350. You get 84.5 - which means this horses UTs are 85% (if you round).
You add together the horses current personality and intelligence. Then you add the breed max together. Then you divide the horses current intelligence and personality added together by the horses breed max. multiply the answer by 100
horse intelligence + personality --------------------------------------- x 100 = % breed intelligence + personality
Look in the library for the max UTs of the breed. The UTs are untrainables if you didn't know and they are the intelligence and personality. Add your horses uts together, right them down, then divide the answer by the sum of the breed's max UTs and then you multiply by 100 and round to the nearest tenths. There is no way of cheating to max your horse on the game. If you have a training pen on your ranch you can train once and get +1 on every stat, except the UTs.
