How do you cancel a minecraft account?

By cancel I suggest you mean get out of minecraft or close it down, all you do is click ESC and click a save and quit to title, the simply click the X button in the right hand side or left hand side, depending on what brand computer you have. You have just closed down minecraft!

There's no way to, as the Minecraft servers themselves hold your data. You can reset your stats by deleting the folder itself by following these steps;

1)Go to the RUN application

2)Type %AppData%

3)Find Minecraft

4)Then delete the stats folder.
