Right-click on Gimp in your Applications folder and select "Open With". This will open a window of all your applications and you'll select X11. X11 is under Utilities.
I'm not sure how you managed to make Gimp open with Photobooth, but kudos to you haha.
You can change the default program that opens when downloading a photo for Windows 7 by going to Start and selecting Default Programs. Choose Set Your Default Programs and choose your preferred program from the list on the left hand side, then click OK.

Try using Open with... It will allow you to change the default program to open your downloads as well as you can choose which program you want to use open the file.
find a movie you want to play right click it and choose properties click the "opens with" button and choose Nero all movies of this type will then open with Nero also you can open Nero movie player and navigate to the settings menu for it in there should be an option to make Nero default player
