One at a time, otherwise the bridge and tailpiece can fall off. Loosen all the strings slightly to reduce pressure, then entirely loosen the string you wish to change. Remove it from the peg and tailpiece, then replace it with a new string. New strings don't like to hold the pitch very well, so try to avoid changing more than one string at a time.
