Unfortunately, if your goal is to start in Episode One and have something else than a Human Male, you're not in luck. The only way you can choose another race or sex is by starting wit episode two.
NOTE When reaching the end of Episode One, you will chooose between the halfling, dwarve, elf or human mate, which will create a hybrid child (or human if you choose so) if you choose to continue to Episode Two with that same game.
Don't worry, you will keep all your fathers items.

I've been looking things up and it said you must kill greater demons to get a knight card. If you are referring to Valhalla Knights : Eldar Saga, I can help you out as I have played this game ALOT. If you're referring to VK 1 or 2, I cannot help you. For VKES, you simply need too complete the first optional quests in Episode 2 to get the Knight Card. For the other games, I hope someone else reads this and can answer.
Thought Points are used to give instructions to your characters during battle that you don't use.
