Ceramic is not a good conductor of heat compared to metals like copper or aluminum. It is generally considered to be a poor conductor of heat, which is why ceramic pots and pans are often used for slow and even cooking.
Cooking pans coated with foodsafe ceramics are fine as they hold the heat evenly.
Pans are not made of wood primarily because wood is not a suitable material for withstanding high temperatures and direct heat without burning or warping. Additionally, wood is porous, which can lead to bacterial growth and make it difficult to clean thoroughly. Metal, ceramic, and other materials are preferred for cookware as they provide better heat conduction, durability, and hygiene.
