I don't know how scientists collect oxygen, but you can run an electric current through water(electrolysis) and have test tubes at the ends of each wire that you are placing in the water. Hydrogen will be found in the wire that is connected to the cathode(negative end) of the battery. Oxygen will be found at the anode(positive end). Have fun collecting oxygen, be careful with this experiment though.

On emethod is by collecting air samples, colling and heating it so everything seperates at it temperature and separating them out.
