Start with a thin cut of beef steak. Round steak works well but if you want to splurge you can use ribeye or New York strip. Pound the steak to tenderize and make it thinner (about 1/4 to 1/2 inch thick). Season the meat with salt and pepper. Start the oil to fry the steak heating in a heavy skillet. You'll want the oil to be about 1/2 inch deep. Dip the steak in milk or buttermilk. Then dip it in flour. Some people like to repeat this process for extra crust. Let the steak sit on a plate or rack while the oil heats to 380F. Fry the steak until golden brown on each side. Drain on paper towels.
