You buy a bag of popcorn and add the kernals to a pot with a thin layer (about a tablespoon) of hot oil in the bottom. When they start to open up, cover the pot and shake it back and forth until you don't hear kernals popping anymore. Remove from heat, add butter and salt, and eat.

-------------------------------------------------

Use the stove. In a large pot, pour/melt just enough margarine/oil to cover the bottom of the pot no deeper than 1/4inch (the width of a pencil eraser) and cover with about twice that depth with popcorn kernels. Stir to cover the kernels with the oil. COVER and put on a hot burner, move it around a bit to evenly heat the bottom of the pot. It will take a few minutes before the first popping starts. Remove from the heat when the popping slows down or when you see the pot lid rise (full). Tip: use peanut or cottonseed oil for the best taste.

The same way that you would TODAY, if you do not own a Microwave. You would use a direct HEAT SOURCE, such as:

1. A Flame or fire created by Gas, or Oil, (or other Petroleum based fuel), or Wood.

2. Electrically power heat coil (electric stove)

You can heat some oil in a pot then put in the popcorn and put on the top. Remove from stove when the popping slows down. You can also use a popcorn popper that goes in a fire place.

They probably used a regular oven. Before that, they may have used a furnace or a large cauldron to cook food in.

What about the structure of water allows you to pop popcorn in a microwave oven?

Each kernel of popcorn contains a small amount of water which evaporates, causing steam, and popping the kernel open. Water doesn't have a crystaline structure, thus heat causes jumps in energy levels easier. Using both these facts, we can then infer about why the structure of water causes popcorn to pop under large amounts of energy, called microwaves.
