You don't counter kill with your fists. Using Right trigger + X in correct timing (Xbox 360) you will disarm your foe and then be able to kill him using his own weapon. This is useful for disarming more difficult foes, such as the agile or armored enemies in Assasins Creed 2.
It's quite tricky, but you have to press attack at the exact moment that the enemy's weapon touches yours. Some people find it easier to listen out for it than to watch and try and get the timing right.

By far Assassins Creed, that's a no brainer question, but i guess it depends on what you like, do you like terrible MMO style games, where you go around trying to kill people but they fall on the floor and you didnt even cut them. Or do you like a great counter kill game, look up videos on both haha its a no brainer. ;)
