If you are talking about the last boss of the last stage in the 'main story' it is Mashtooth who is a space pirate and has two parts one harder than the other. If you mean the VERY last boss in stage 10 then it is Old Man Lobber who is much harder than Mashtooth.

You don't actually get any reward but you just get a time for beating old man lobber. So after you beat him you basically have completed all the courses of the whole game.
