Unfortunately, Rockstar removed the in-game missions such as Paramedic, Firefighter, and Cab Driver missions. However, when you reach a certain point in the game you can still do police missions. To do police missions get in any police vehicle (FIB Buffalo included) and a message should a pear in the top corner of the screen saying to "Press __ to access the police computer".
