The maps should automatically be loaded into your game, however sometimes the newest map packs must be selected in a special playlist. Eventually, all the maps are added to the regular core and hardcore playlists. To play the Nazi Zombies maps, select "Nazi Zombies" from the main menu.

The COD4 guys have 4 new maps. You can download them from the PlayStation Store if you are on a PS3. Otherwise... someone else will have to provide an answer for that...
