The best way to be able to beat Erica is by bringing Pokemon that would match her weaknesses. (Ex.: Psychic for Poison/Grass types, Fire for Grass types.) If you only got one Pokemon that matches her weakness, then you would need to train it a little bit more, because what if it faints and the other Pokemon don't have a type advantage? Exactly. Also, it is recommended to bring at least 2 or 3 type advantages Pokemon in my opinion.
Next you would need to bring some Potions, Antidotes, and Paralyze Heal, because one of her Pokemon can do a lot of status effects!
After all this you should be fine. Remember to use type advantages moves and Pokemon as well!

You can train your Pokemon by battling Wild Pokemon, fight new Trainers, or fight new Gym Leaders. It is recommended that if you are going to battle wild Pokemon, you should fight Pokemon relatively close to your Pokemon's level. Fighting new Trainers will provide more Experience Points than fighting wild Pokemon, though, making the training go by quicker.
