In order to clean and fillet a fish you need a knife. First you cut the head off and then you fillet the sides. To do this you just cut the sides off the fish. For more experienced filleters, it is actually possible to take the bones out of the fillets before eating then. This could save choking to death at the dinner table.

i cut a slit in the skin all the way around the catfish's neck then cut down the top of its back, then take a pair of pliers to tear off all the skin at once. then after that, just cut off the meat.

This may not be the best way, but my dad cuts off their heads with a hatchet first.

You hang the catfish on a hook or nail and slice around the head and pull off the skin in strips with Catfish Skinner tool. (They have no scales) you then lay skinned fish on fillet board and remove the guts and fillet it with a sharp fillet knife.... or you can cut it into steaks by cutting across the body with a very sharp knife if it is a very large fish. Then put the steaks or fillets in freezer bags and freeze it or cook it and eat it.
