At the bottom right side of the list are the words "More categories". That is one way to get to the categories. You can click on each one to find subcategories. The second way to get to the list of categories is to click on the words "Browse categories" under "Site tools" in the blue bar on the left of every page.

Most of the users asking the questions just pick random categories to put the question in because they are too lazy to find the correct one. Also, sometimes they just go with the suggestions the site gives them even if they are not the correct category.

There is no "One Republic" category on this site because there aren't enough questions to qualify. To qualify for a new category there should be close to 400 questions of the subject.
Not every question on WikiAnswers is necessarily mature. We have an entire category called "Jokes and Riddles" where you can find humorous questions.
