In minecraft Beta 1.8+ (also known as the Adventure Update), there is a new gamemode called Creative. It's exactly like the free version (classic), except with new blocks, dynamic lighting, and biomes. To fly, press space twice. To exit fly mode, space twice again.
Please note this only works in Creative mode. All existing maps before 1.8 will be labeled as "Survival Mode". It can be changed using a mod known as Single Player Commands.
Double tap the jump button to fly Double tap the forward button to go up Double tap the backwards bottom to go down

The regular download as of Minecraft 1.8 is the Beta Minecraft. The last Minecraft update I believe will be the "Final" product and official game and no longer be a game in Beta.
When the full Minecraft game is released you will have it if you buy the beta.
Minecraft is currently scheduled to leave beta November 18th of 2011
