Basically, you need to get a certain amount of points to get three stars in each level. I suggest (this is kinda obvious but still needs to be said) using as little amount of Birds as possible.
If you REALLY want to get three stars in a certain level (or on all levels), then you need to play that level many, many, many times.
A big part of this game is luck. That, and skill. 'Bout a 50%-50% there; kinda like a Yin/Yang style thing.
