Yes it normal for infants to stiffen when crying or screaming. It is caused by the action of crying (try screaming really loud and you will find that you tense your body), they also stiffen if they do not want to be picked up. As long as the stiffness does not last beyond the crying there is nothing to worry about.
you simply take it away. They will cry for a few days and want the bottle, but you have to be strong and just live out the crying. My daughter was off the bottle at age 1. She cried for it for maybe 2 days, then it was over. It was hard on me, but.. She is only 20 months old now and she drinks with a straw. So don't be discouraged.. you can do it!
