Adamantite is found by smashing rocks in the mine on certain floors. You will have to build the bridge that connects to the Forest before you can reach the mine.
The earliest floor you can find Adamantite on is floor 25. After that you won't be able to find it again until floor 51.
It is best to save constantly while in the mine. If you accidentally pass out or miss the floor you want you can just reload instead of having to start all over.
