no unfortunately there is no software out yet that allows you to transfer apps from one itouch to another but I'm sure apple will make a app or something that lets you do that in the not to distant future
You hold down your finger on one of your apps until your apps start wiggling. As you notice there will be an x in the corner of each app. Simply press that and confirm your deleting. You don't need internet to do it.
