You Can't. Big Daddy V was not on the WWE roster when the 08' Smackdown vs. Raw roster was created. This was not only with Big Daddy V, but happened with many superstars. Ie., The Miz, John Morrison, Evan Bourne... etc.

Big Daddy V (Nelson Frazier Jr.) did not retire. He took an abrupt hiatus to loose weight and while gone was released from his WWE Contract. He currently wrestles for independent promotions, most recently East Coast Championship Wrestling (ECWA).

Well, actually Viscera (Big Daddy V, at the time) was given some time off, and his goal given to him by the WWE was to lose weight. He actually gained more weight thus was released by the WWE. Whether or not this will prevent him from future contract negotiations with the company, who knows?!
