Well first off, you should not spray the wall with hair spray at all.
If you take care of the wood cabinets they are not hard to maintain. Make sure to keep water and other irritants off the surface.
Wood is porous, it will have to be sanded.
After you hang the cabinets. Tape off the cabinets and anything else before you spray. However, sprayed texture looks REALLY tacky on the walls unless it is artfully done by a decorative painter. Why don't you just paint?

You pull the old ones off, spray hair spray in the new ones and then put them on. This is coz the hair spray is slippery when you spray it, and it sticks when it dries. Tay page!! ;P
Use a degreaser detergent and then use furniture oil on the cabinets. Alternatively, Murphy's Oil Soap does a fine job.
There are three ways to glaze a cabinet. 1: The pen spray, it is a air brush that you spray on the profile only and the wipe off. 2: The spray, you spray the entire cabinet and door, then wipe off. 3: the rag, you wipe the area you wish to glaze and let dry.
Goof Off will remove many paints ,and if your cabinets have been varnished it will not hurt the varnish. -Try on a piece you can't normally see.
Strip it or sand it off and start over.
If you mean ballpoint ink, take a clean cloth and a bottle of hair spray. Spritz the ink with the hair spray, wait a few seconds and wipe.
